Antipasto: Pane Carasau and Bottarga 

For our starters, we have Pane Carasau,a typical appetiser from Barbagia, a natural region located in the innermost parts of the province of Nuoro. The dish is also famously known as carta musica for the fine and crunchy texture.  The dish is served with Bottarga; dried mullet roe. The simple yet delicious combination highlights the island’s marine and pastoral traditions.

Primo Piatto: Culurgiones 

Culurgiones are a stuffed sardinian ravioli. They are typically stuffed with potatoes, pecorino, mint and garlic. Originally from the Ogliastra region, these raviolis are served with a simple tomato sauce or served with some grated pecorino cheese. They have a distinctive shape: like an ear of wheat. Symbolising prosperity and abundance. 

Now imagine renting a boat in Santa Maria Navarrese– plunging in the refreshing water and perhaps snorkelling. You must be a bit hungry after those activities right? Well, you can feast on these delicious raviolis in the region! In the area, you will also find the wonders of Cala Goloritzè, Cala Mariolu and Cala Luna that are a must see. Primo Piatto: Seafood Fregula

Immerse yourself in the flavours of the sea with Fregula (grilled semolina pasta) served with a mix of fresh mussels, clams, shrimp and squid. The dish also combines fresh tomatoes and garlic, creating a dish that celebrates the riches of the Mediterranean region.

The technique for making this pasta is ancient and is done by hand. It is created by rubbing the semolina between the hands to obtain unique, irregularly-shaped balls. Secondo Piatto: Porceddu 

For your main course, we recommend Porceddu: suckling pig cooked on the grill. This typical northern sardinian dish is flavoured with local herbs such as myrtle and rosemary. The dish is crispy on the outside and tender on the inside. 

The dish was popularised thanks to Spanish influence, which dominated the island for over two centuries. Porceddu is a must-try dish for anyone visiting the island. 

You will find variations of the dish in Castile, where it is mainly baked. We recommend chartering a sailboat in Olbia. Explore the Maddalena archipelago to the north and stop off at one of the many farm restaurants to enjoy a good Porceddu. 

Dessert: Seadas 

We end our culinary journey with Seadedas: fried sweets filled with fresh cheese and topped with hot honey. The dessert is crunchy on the outside and soft on the inside. It perfectly represents the fusion of sweet and savoury flavours typical of Sardinian cuisine. 

We advise you to include at least one Seadas per day in your itinerary! With a boat rental in Alghero, you can visit some of the most beautiful bays during the day. We recommend Cala Dragunara, Maria Pia Beach and Lazzaretto Beach. End the day with a good seafood dinner and of course, a Seadas to finish.
